Cheesy Baked Eggs (Print Version)

# Ingredients:

01 - 12 eggs, beaten up
02 - 1 pound of shredded Pepperjack
03 - 16 ounces (roughly 2 cups) soft cottage cheese
04 - 1/2 cup plain flour
05 - A teaspoon of regular salt
06 - 1 tablespoon butter, melted down

07 - Fresh salsa
08 - Guac
09 - Diced tomato chunks
10 - Chopped onion bits
11 - Cool sour cream

# Instructions:

01 - Preheat your oven to 350°F (175°C). Rub some melted butter all over a 9x13 pan so the food doesn’t stick later.
02 - Throw the salt, eggs, flour, cottage cheese, and Pepperjack into a big bowl. Stir them up until it’s all smooth.
03 - Pour your mix into the prepared pan. Bake for 50-60 minutes. Around the 45-minute mark, check if the eggs are firm.
04 - Cut it into squares once it’s warm. Set out sour cream, guac, salsa, or other toppers so everyone can pick what they like.

# Notes:

01 - If you’re making a smaller batch, halve the ingredients and use an 8- or 9-inch square pan. Bake it for about 30-40 minutes.
02 - Want a flavor twist? Swap out the Pepperjack with cheddar cheese.
