Turn your oven on to 400°F (200°C). Prepare a baking tray with foil and apply a light coat of oil.

Add some oil to a small pan and warm it over medium heat. Toss in your garlic and onions, sprinkle a little salt and pepper, and cook until soft. Take it off the heat and let it cool down.

Put the broccoli onto a clean towel. Wrap it up and squeeze well to get rid of all that extra water. Move it to a big bowl once you're done.

Throw the breadcrumbs, parmesan, cheddar, eggs, and a bit more salt and pepper into the bowl with the broccoli. Stir until the mixture looks even.

Form the mixture into small round patties. Set them gently on the prepared tray.

Put the tray in the oven and bake for 15 minutes. Flip each patty and return to the oven for another 15 minutes, or until they're nicely browned and crispy.
