Cheesy Broccoli Bites (Print Version)

# Ingredients:

01 - 12 ounces broccoli, thawed from frozen
02 - 1/2 cup parmesan cheese, grated
03 - 3/4 cup of panko crumbs
04 - 1/3 cup of sharp cheddar, shredded
05 - 2 teaspoons of oil for cooking
06 - 2 eggs, whisked
07 - 1/2 onion, diced
08 - 2 garlic cloves, finely chopped
09 - Season with salt and pepper as you like

# Instructions:

01 - Turn your oven on to 400°F (200°C). Prepare a baking tray with foil and apply a light coat of oil.
02 - Add some oil to a small pan and warm it over medium heat. Toss in your garlic and onions, sprinkle a little salt and pepper, and cook until soft. Take it off the heat and let it cool down.
03 - Put the broccoli onto a clean towel. Wrap it up and squeeze well to get rid of all that extra water. Move it to a big bowl once you're done.
04 - Throw the breadcrumbs, parmesan, cheddar, eggs, and a bit more salt and pepper into the bowl with the broccoli. Stir until the mixture looks even.
05 - Form the mixture into small round patties. Set them gently on the prepared tray.
06 - Put the tray in the oven and bake for 15 minutes. Flip each patty and return to the oven for another 15 minutes, or until they're nicely browned and crispy.
