Cut the block of cheese into squares that are about half an inch thick. Then, take each square and slice it corner to corner to create triangles.

Put the Doritos in a sturdy plastic bag and smash them with a rolling pin or heavy object until crumbly. Or pulse them in a food processor a few times.

Mix the flour, garlic powder, paprika, cayenne (if you like spice), salt, and pepper in one shallow bowl. Beat the eggs in another. In the last bowl, pour the crushed Doritos.

Dip each cheese triangle in flour first, then into the egg, and finally cover entirely with the crushed chips. Press gently to make them stick.

Line a tray with parchment paper and arrange the coated cheese pieces on it. Place in the freezer for 30 minutes or longer to firm up the crust.

Heat around 3-4 cups of vegetable oil in a deep pan or a Dutch oven over medium heat. Aim for 350°F (175°C).

Carefully lower a few coated cheese triangles into the oil. Don’t overcrowd. Fry them for about a minute or two on each side until crispy golden and melted.

Lift the fried cheese out with a slotted spoon. Drain off extra oil on some paper towels. Enjoy hot with a sauce you love, like ranch or marinara.
