Set your oven to 400°F (204°C). Cover a big baking tray with parchment paper and leave it for now.

Mix together the flour, sugar, baking powder, salt, and pepper in a big mixing bowl. Just whisk it all together till blended.

Grab a cheese grater and shred the cold butter right into the dry mixture. Then, use a pastry cutter or two forks to break it all down into a crumb-like texture.

Toss in the rosemary, diced apple, crumbled bacon, and shredded cheese. Stir lightly to spread them around.

Pour in 1 cup of cream and 3 tablespoons more. Use a fork to stir till it forms a sticky dough. Turn it onto a floured counter and knead a few turns (6 or 7 should do it) into a smooth ball.

Flatten the dough into a circle about an inch (2.5 cm) thick. Use a biscuit cutter to punch out rounds. Roll and cut the leftover bits until it's all used up.

Place the biscuits on your prepped tray and brush the tops with the rest of the cream. Bake them in the oven for 18-20 minutes, or until they turn beautifully golden.
