Turn on your oven and set it to 350°F. Line a baking tray with parchment.

Mix together salt, baking powder, and flour in a bowl. Set it aside for later.

In a large bowl, cream the butter with the sugar until it looks fluffy. Stir in the egg and cotton candy extract, blending well. Gradually add the dry mix, working everything together till smooth. The dough might feel a bit crumbly.

Sprinkle some flour or powdered sugar on your workspace. Split the dough into two even portions.

Add pink coloring to one batch and knead it in until it's mixed evenly. Repeat with the blue coloring for the other batch.

Roll both dough batches out to about ¼-inch thick sheets. Stack one on top of the other, making sure there’s no air trapped. Roll the layers tightly like a log or a jelly roll.

Cut the rolled dough into slices, about ¼-inch thick. Lay them on the prepared tray and bake for 7 to 9 minutes. Avoid browning them.

Let the cookies cool directly on the tray for 20 minutes before you move them to a cooling rack.

Take the lid and foil off the frosting tub, then microwave it for 1 minute. Mix in some cotton candy extract if you’d like.

Put the frosting into a bag if you plan to pipe it. Or just drizzle it with a spoon. Sprinkle decorations before it dries.

Let the frosting harden completely before stacking. If stacking in layers, use parchment or wax paper between cookies.
