Cajun Creamy Fish (Print Version)

# Ingredients:

01 - 4 skinless red snapper fillets.
02 - 2 tablespoons Cajun spice blend.
03 - 3 tablespoons cooking olive oil.
04 - 1 minced garlic clove, about a teaspoon.
05 - 1 tablespoon of unsalted butter.
06 - 1 cup chicken broth.
07 - 14 ounces canned diced tomatoes, liquid removed.
08 - 4 ounces of softened cream cheese.
09 - A teaspoon more of Cajun spice mix.
10 - 1 tablespoon fresh chopped parsley.

# Instructions:

01 - Dry the fish really well using paper towels. Rub with the Cajun spice blend.
02 - In a pan with heated oil, cook the fish for 2 minutes per side. Set it aside.
03 - Add butter to the pan. Stir in garlic, cooking it for about a minute.
04 - Pour in chicken broth, tomatoes, and cream cheese. Stir and let it cook until it’s all smooth.
05 - Place the fish back in the pan. Let warm for 2 minutes. Sprinkle parsley on top.

01 - Clean the pan before making the sauce to avoid burnt bits.
