Soft Peanut Butter Bars (Print Version)

# Ingredients:

01 - 2 cups quick-cooking oats
02 - 1 teaspoon baking soda
03 - 1 cup packed light brown sugar
04 - 1/2 teaspoon table salt
05 - 2 teaspoons pure vanilla extract
06 - 1 cup granulated white sugar
07 - 1 cup smooth peanut butter
08 - 1 cup unsalted butter, at room temperature
09 - 2 large eggs
10 - 2 cups plain all-purpose flour

# Instructions:

01 - Set your oven to 350°F (175°C). Coat a 9×13 pan with non-stick spray and put it aside.
02 - Use a large bowl to whip together the softened butter, white sugar, and brown sugar until they’re fluffy.
03 - Blend in the peanut butter, followed by the eggs and vanilla, stirring until it all comes together smoothly.
04 - In a separate bowl, mix the flour, baking soda, and salt with a whisk or fork.
05 - Little by little, add the dry powder mix into the wet blend. Stir lightly so it’s just combined.
06 - Gently fold the oats into the mixture until they’re evenly mixed throughout.
07 - Even the dough out by spreading it across the prepared pan.
08 - Bake in the middle of the oven for around 20 to 25 minutes. Once the edges turn light brown and a toothpick slides out clean from the middle, it’s ready.
09 - Let the dish cool completely in the pan. Then, slice it into squares before serving.
