Buttery Herb Steak (Print Version)

# Ingredients:

01 - 2 sirloin steaks, 8 ounces (220g) each.
02 - 8 tablespoons softened unsalted butter.
03 - 1 finely grated garlic clove.
04 - 1 tablespoon minced fresh chives.
05 - ½ teaspoon minced fresh thyme leaves.
06 - 2 tablespoons chopped fresh parsley.
07 - 2 teaspoons freshly squeezed lemon juice.
08 - 1 teaspoon Dijon mustard.
09 - ½ teaspoon chili flakes.
10 - ¾ teaspoon smoked paprika.
11 - ¼ teaspoon black pepper.
12 - ½ teaspoon Worcestershire sauce.
13 - ½ teaspoon salt.
14 - 1 tablespoon vegetable oil.

# Instructions:

01 - In a small bowl, combine the butter, garlic, fresh herbs, lemon juice, mustard, Worcestershire, and all seasonings. Mix it all up until smooth.
02 - Use paper towels to dry your steaks. Sprinkle them generously with salt and pepper on both sides.
03 - Place a sturdy pan over high heat. Once it's super hot, pour in the oil and let it warm for a few seconds.
04 - Lay the steaks in the pan and leave them alone for 2 minutes per side for medium-rare.
05 - Take the steaks off the heat and let them sit for 5 minutes so the juices settle.
06 - Spread the cowboy butter on top of each steak and serve while hot.

# Notes:

01 - Keep the butter soft but not melted for easier mixing.
02 - Cowboy butter can be stored in the fridge for 4-5 days if made ahead.
03 - This goes great with any steak cut you prefer.
04 - You can freeze the leftover butter for later use.
