07 - 1/2 teaspoon soy sauce
08 - 1/2 teaspoon juice from pickles
09 - 1 tablespoon minced dill pickles
10 - 1/2 cup plain mayo

→ Smash Burger Tacos

11 - 6 pieces of small flour tortillas, the street taco size
12 - 1 pound of ground beef—go for an 80/20 ratio
13 - Shredded lettuce leaves
14 - Burger-style pickle slices
15 - 1/4 teaspoon black pepper, ground
16 - 6 slices of melty American cheese
17 - 3/4 teaspoon kosher salt
18 - (Optional) Thin rings of white onion
19 - (Optional) Cooked strips of crispy bacon

# Instructions:

01 - Stir together mayo, ketchup, minced pickles, pickle juice, smoked paprika, garlic powder, kosher salt, black pepper, soy sauce, and rice vinegar in a small bowl. Make sure it’s blended well, then keep it to the side.
02 - Blend ground beef with the kosher salt and black pepper in a bowl. Shape the mix into 6 evenly sized balls and leave them ready for later.
03 - Have all your stuff ready to go—cheese slices, tortillas, lettuce, pickles, and optional extras like onions or bacon. Get this step done before cooking since things move fast.
04 - Heat a flat griddle on medium-high. Drop the meat balls onto the hot surface and smash them flat with a burger press for 15-20 seconds. Cook for 40 seconds, flip them, and immediately put a cheese slice on top. While that’s happening, toss the tortillas on to toast too. Cover everything with a lid and cook for 2 minutes. Flip tortillas one last time, then scoop patties onto them with a spatula. Move them to a plate.
05 - Stack lettuce, burger pickles, and burger sauce on each cheesy patty-tortilla combo. If you’re using extras like bacon or onions, throw those on too. Serve and enjoy right away.
