Switch on the oven following the temperature on the fry package. Cover 2 baking trays with foil, then lightly coat with cooking spray. In a small bowl, mix all the powders and seasoning (skip the ranch). Scatter the fries evenly over the two sheets. Toss them gently with the mixed spices and save a pinch of seasoning for topping later.

Follow the instructions on the package to bake the fries. Rotate the trays halfway if the recipe suggests.

Melt some butter over low-medium heat in a skillet. Stir in the flour and whisk for about a minute or two. Slowly add milk while whisking to get the mixture smooth. Keep it on the heat for a bit until it thickens, then add cheddar in small portions, mixing until melted. Keep this on the lowest heat setting to stay warm without cooking further. If it hardens, add a tiny splash of milk.

On a serving plate, pile up a quarter of the fries. Pour about 1/4 cup of cheese sauce on top. Add some ranch over it, then sprinkle with the leftover seasoning mix. Do the same for the rest of the fries.

Eat right away while hot! If you'd like, serve with extras like cheese sauce on the side, additional ranch, or ketchup.
