Berry Red Cabbage (Print Version)

# Ingredients:

01 - 1 big red cabbage, about 1kg (2lb 3oz).
02 - 450g of peeled and diced cooking apples.
03 - 5 tablespoons of cranberry jelly.
04 - 2 tablespoons of cider vinegar or wine vinegar.
05 - 50g of butter.
06 - 1 leek, sliced into thin strips.
07 - Optional: a tiny bit of sugar.
08 - Salt and a sprinkle of black pepper, adjusted to your liking.

# Instructions:

01 - Set your oven to 150°C (130°C if using fan) or 300°F.
02 - Take off the outer leaves and cut out the core of the cabbage.
03 - Shred the cabbage thinly into strips.
04 - In an ovenproof dish, layer the cabbage, apples, cranberry jelly, and leek.
05 - Sprinkle salt and pepper on every layer.
06 - Drizzle the vinegar evenly across the layers.
07 - Dot small pieces of butter on top.
08 - Cover the dish and start by bringing it to a boil on the hob.
09 - Put the dish into the oven and cook for 2 to 2½ hours. Stir it from time to time.
10 - Taste it, adjust the seasoning, and add sugar if you want a bit more sweetness.

# Notes:

01 - Try to slice the cabbage into really fine strips.
02 - Pick a pan big enough for the ingredients to puff up while cooking.
03 - Give it a stir every half an hour.
04 - Don’t skip the vinegar, it makes a big difference in flavor.
