Heat up a skillet over medium heat and cook the onion and ground beef until nicely browned. Get rid of any grease, then mix in minced garlic, cumin, chili powder, salt, pepper, and your salsa. Let it simmer for 2–3 minutes until it thickens. Take it off the heat and mix in the cheese.

Pop some of the beef mixture in the middle of each tortilla. Fold the sides in and roll them up tight so they stay together like a burrito.

To fry in a skillet: Heat up oil and fry your chimichangas seam-side down, turning, until golden and crispy. To bake in the oven: Brush with oil, place on a tray, and bake at 200°C (400°F) for 15–18 minutes until crunchy. To air fry: Coat with oil and air fry at 190°C (375°F) for 8–10 minutes, flipping halfway through.
