Baked Eggs Feta Style (Print Version)

01 - 2 tablespoons olive oil, extra virgin
02 - 4 eggs, large
03 - A pinch of red pepper flakes
04 - A block of feta cheese, about 200g
05 - Fresh oregano leaves, 2 tablespoons
06 - Halved cherry tomatoes, 1 cup
07 - 1/4 cup chopped kalamata olives, pits removed
08 - 2 cloves of garlic, finely chopped
09 - Thin slices of a small red onion
10 - Salt and black pepper to taste
11 - Optional garnish: chopped fresh parsley

# Instructions:

01 - Set your oven to 400°F (or 200°C) to warm it up. Spread olive oil on the base of a ceramic dish for a smooth, flavorful start.
02 - Lay out the onion slices and garlic across your dish. Break apart the feta and scatter it evenly. Add the tomatoes (cut side up) and olives around it, giving it a vibrant and colorful look.
03 - Gently drop the eggs onto the feta without breaking the yolks. Sprinkle oregano leaves, red pepper flakes, plus a touch of salt and pepper. Finish with another quick drizzle of olive oil.
04 - Pop the dish into the oven and let it bake for 12-15 minutes. You'll know it's done when the whites are set, but the yolks are still a bit runny.

# Notes:

01 - Switch things up by adding spinach, swapping feta for goat cheese, including spicy sausage like chorizo, tossing in roasted peppers, or sprinkling some za'atar seasoning.
02 - Great for a lazy weekend morning and can easily be scaled to feed more guests.
