Cheesy Baked Eggs Dish (Print Version)

# Ingredients:

01 - 1 tablespoon melted butter
02 - 12 large eggs, whisked
03 - 16 ounces of cottage cheese
04 - 1 pound of shredded Pepperjack cheese (16 ounces)
05 - 1 teaspoon of salt
06 - 1/2 cup regular flour

→ Optional Toppings

07 - Guacamole
08 - Chopped onions
09 - Diced tomatoes
10 - Sour cream
11 - Salsa

# Instructions:

01 - Set your oven to 350°F (175°C) to warm up. Coat a 9x13 inch dish with the melted butter so nothing sticks.
02 - Grab a big mixing bowl. Toss in the beaten eggs, cottage cheese, shredded Pepperjack, flour, and salt. Stir it all up until everything's evenly blended.
03 - Pour your mixture into the buttered dish. Pop it in the oven and bake for 50 to 60 minutes. Keep an eye on it—start checking at 45 minutes to see if the eggs are set.
04 - Cut it into squares while it's still warm. Let folks top their squares with salsa, guacamole, sour cream, chopped onions, or diced tomatoes, however they like it.

# Notes:

01 - If you need a smaller portion, use an 8x8 or 9x9 pan and bake for 30-40 minutes.
02 - Prefer Cheddar? It works just as well as the Pepperjack.
03 - Great to make ahead of time and warm up later.
