# Ingredients:

01 - 2 tablespoons chives, finely chopped
02 - A dash of black pepper, freshly ground
03 - 8 large eggs
04 - A pinch of kosher salt
05 - 1/4 cup milk

06 - 8 strips of bacon

→ Bagel Layer

07 - 4 tablespoons softened cream cheese
08 - 1 1/2 cups Cheddar cheese, shredded
09 - 10 mini bagels, sliced in half

→ Finishing Touches

10 - 3 tablespoons butter, melted
11 - 2 teaspoons poppy seeds
12 - 2 teaspoons sesame seeds
13 - 2 teaspoons granulated garlic
14 - 2 teaspoons dried onion flakes

15 - Non-stick cooking spray for the dish

# Instructions:

01 - Set your oven to 350°F (175°C). Grab a big baking dish, spritz it with non-stick spray, and get it ready. In a big bowl, whisk together the eggs and milk until it's bubbly and smooth. Put it aside for now.
02 - Heat a skillet over medium heat. Fry the bacon strips until they're nice and crispy. Move them onto paper towels to drain, and pour out most of the grease, but keep a little bit in the skillet.
03 - Pour the egg mix into that same skillet and lower the heat to medium-low. Stir it gently every so often. When it's almost cooked through, toss in the chives and season with some salt and black pepper. Once done, take it off the heat.
04 - Spread a nice layer of cream cheese on the cut sides of your bagel bottoms. Arrange them side by side in your prepared baking dish.
05 - Spoon the scrambled eggs on top of the bagels. Add a slice of bacon to each, then sprinkle shredded Cheddar evenly across everything.
06 - Stir together the melted butter, sesame seeds, dried onion, garlic powder, and poppy seeds in a small bowl. Brush this mix over the bagel tops.
07 - Stick the dish in your preheated oven and let it bake for 15–20 minutes. When the cheese is gooey and browned a bit, pull it out. Serve warm and enjoy.
