Vegetarian Tea Sandwiches (Print Version)

# Ingredients:

01 - 1.5 cups plain yogurt
02 - 1 cup shredded purple cabbage
03 - 1 cup shredded carrots
04 - 12 slices of wholegrain bread
05 - 0.5 cup creamy avocado cilantro dressing
06 - Salt, adjust as needed
07 - Optional: sprinkle of black pepper
08 - Optional: fresh herbs like mint, dill, or basil

# Instructions:

01 - Measure and gather all the ingredients. Chop your bread edges if you'd like, or keep them whole. Blend the avocado dressing in a food processor, then strain the yogurt. Shred the cabbage and carrots so they're ready to go.
02 - Take two bowls. In one, mix shredded purple cabbage with half the yogurt. In the second, do the same with shredded carrots and the remaining yogurt. For both, toss in some salt and black pepper if you feel like it.
03 - To set it up, grab four bread slices per sandwich. Spread the cabbage mixture on one slice, cover the next with the carrot mixture, and smear the green dressing on another. If you'd like, sprinkle your slices with fresh herbs before moving on.
04 - Start stacking the flavored slices on top of each other, then finish with the fourth slice on top. Take a sharp knife and slice diagonally into two halves. You can go further and cut those halves again to make four smaller sandwich pieces. You'll end up with 12 fun-sized sandwiches.
05 - Place these mini sandwiches however you'd like on a nice plate. Dig in and enjoy with friends or family!
