Sunshine Tahini Bowl (Print Version)

# Ingredients:

→ Dressing

01 - ¼ cup extra virgin olive oil
02 - ¼ cup tahini
03 - 1 tsp salt
04 - 2 limes

→ Salad

05 - ½ cup cilantro, finely chopped
06 - 5 stalks celery, diced
07 - 2 medium cucumbers, cut into bite-sized pieces
08 - 1 can chickpeas, 14 oz, drained

# Instructions:

01 - Juice both limes into a medium bowl, tossing in the zest from one as well. Stir in the olive oil, salt, and tahini until smooth.
02 - In a big bowl, mix the chickpeas, celery, cucumber chunks, and cilantro.
03 - Pour the dressing over the mixture and give everything a good toss. It’s ready to eat right away, or keep it in the fridge tightly covered.
