In a small bowl, toss together the chopped strawberries and sugar. Mash them gently with a fork until the mixture is combined. Put it aside for now.

Sift the matcha powder into a fresh small bowl to get rid of any clumps. Pour in the water and whisk quickly using a matcha whisk, moving it from side to side until it’s all mixed and a bubbly foam starts forming on top.

Scoop the strawberry sugar mix into the bottom of a tall glass. Add ice until it’s halfway full, then pour in almond milk until it reaches about two-thirds of the glass. Carefully pour the matcha mix on top.

Grab a straw to mix it all together and give it a taste. If you want it sweeter, stir in a little maple syrup or honey until it tastes just right for you.
