Flank Steak Veggie Rolls (Print Version)

# Ingredients:

→ Marinated Steak

01 - 2–2 1/2 lbs flank steak, sliced into 6 portions
02 - A pinch of kosher salt
03 - A dash of black pepper
04 - 1/2 cup tamari
05 - 2 crushed garlic cloves

→ Veggies

06 - 1 lb asparagus, ends snapped off
07 - 3 thinly sliced bell peppers, deseeded

→ Sauce Ingredients

08 - 1/4 cup balsamic
09 - 1/3 cup beef stock
10 - 2 tbsp unsalted butter

→ Extras

11 - Spray olive oil

# Instructions:

01 - Sprinkle salt and pepper over steak portions. Toss them in a zip-top bag with tamari and garlic. Seal tightly and shake to coat evenly. Store in the fridge for at least an hour, or let it sit overnight.
02 - Take the marinated steak out of the fridge and toss the excess marinade. Lay each steak flat, place a few asparagus spears and bell pepper strips in the center, roll up, and hold in place with a toothpick.
03 - Set the air fryer temperature to 400°F (200°C) and let it warm up.
04 - Put the steak rolls into the air fryer basket in batches. Spray exposed vegetables with olive oil. Air fry for 5 minutes.
05 - Take the cooked rolls out of the basket and leave them to rest for around 5 minutes before serving or slicing.
06 - As the rolls are resting, combine balsamic, broth, and butter in a small saucepan over medium heat. Stir as it reduces and thickens by 50%. Add a bit of salt and pepper to bring out the flavors.
07 - Drizzle the sauce over the steak rolls just before eating.
