Steak Corn Gorgonzola (Print Version)

# Ingredients:

01 - 1 pound steak (flank, ribeye, or sirloin)
02 - 1 tablespoon balsamic vinegar
03 - 1 tablespoon olive oil
04 - 1 teaspoon salt
05 - 1/2 teaspoon garlic powder
06 - 1/2 teaspoon paprika (smoked)
07 - 1/2 teaspoon black pepper

→ Salad Mixings

08 - 6 cups fresh greens (romaine, spinach, or arugula)
09 - 1 ear corn, charred and removed from the cob
10 - 1/2 cup halved cherry tomatoes
11 - 1/3 cup crumbled blue cheese (Gorgonzola)
12 - 1/4 cup toasted pecans or walnuts
13 - 1/4 thin slices of a red onion
14 - 1 optional avocado, sliced

→ Tangy Dressing

15 - 1/4 cup balsamic vinegar
16 - 2 tablespoons olive oil
17 - 1 tablespoon maple syrup (or honey)
18 - 1 tablespoon Dijon mustard
19 - 1 clove minced garlic
20 - 1/4 teaspoon black pepper
21 - 1/4 teaspoon salt

# Instructions:

01 - Grab a small dish and mix together balsamic vinegar, olive oil, garlic powder, paprika, salt, and pepper. Slather this mixture on the steak and let it sit for 15–20 minutes on the counter. Fire up your skillet or grill to medium heat and sear the steak for about 4–5 minutes each side (medium or medium-rare). Let it rest for 5 minutes before cutting into thin pieces, slicing against the grain.
02 - Coat the outside of the cob with a touch of olive oil and grill it over medium heat. Flip it occasionally, and cook for about 8–10 minutes until it’s a little darkened. Cool it off, then slice the kernels off.
03 - Combine the balsamic vinegar, olive oil, mustard, maple syrup, minced garlic, and a little salt and pepper in a small dish. Whisk until smooth.
04 - Dump the greens into a giant bowl. Toss in the grilled corn, onion, tomatoes, nuts, and crumbled blue cheese. Lay the steak slices on top, drizzle with dressing, and mix it around lightly.
05 - If you like, top it off with extra cheese and thinly sliced avocados. Serve up your dish immediately and enjoy!
