Steak Bowls Mediterranean (Print Version)

# Ingredients:

→ Beef and seasoning

01 - 1 lb sirloin or flank steak
02 - Add pepper as you like
03 - Season with some salt

→ Fresh Veggies

04 - 1/2 of a red onion, sliced thinly
05 - 2 cups of cherry tomatoes, cut in halves
06 - 1 small cucumber, diced up
07 - 1/4 cup parsley, finely chopped
08 - 1/2 cup of yellow bell pepper, chopped into cubes

→ Creamy Sauce

09 - 1/2 cup of plain Greek yogurt
10 - 2 tablespoons of olive oil
11 - 1 clove of garlic, minced up
12 - Juice from 1 small lemon
13 - 1/4 teaspoon of ground cumin
14 - Salt to your taste preference
15 - 1/4 teaspoon of paprika powder
16 - Add pepper if you'd like more flavor

→ Toppings

17 - Sprinkle chopped almonds or your favorite nuts (optional)
18 - Chopped parsley for garnish

# Instructions:

01 - Sprinkle salt and pepper over your steak. Heat a grill or pan on medium-high. Cook each side for around 4-5 minutes, or longer if you’d like it well done. Let it cool for a few minutes before slicing thinly.
02 - In a mixing bowl, toss together the diced cucumber, halved tomatoes, thin onion slices, bell pepper cubes, and fresh parsley. Add a dash of salt for taste.
03 - In a small dish, stir Greek yogurt, olive oil, squeezed lemon juice, minced garlic, cumin, paprika, and a sprinkle of salt and pepper together until smooth.
04 - In serving bowls, layer the veggie mix at the bottom, then add slices of steak and drizzle the yogurt sauce over everything.
05 - Top the bowl with some fresh parsley and a handful of chopped nuts, if you like.
06 - Serve it fresh, warm, or let it cool down to room temp before eating.

01 - Always let steak sit for a few minutes after cooking so it stays juicy.
