Sweet Potato Waffles (Print Version)

# Ingredients:

→ Dry Ingredients

01 - ½ teaspoon cinnamon, ground
02 - 1 teaspoon soda for baking
03 - 2 teaspoons powder for baking
04 - 2 cups plain flour
05 - 1 teaspoon pumpkin spice mix

→ Wet Ingredients

06 - ¼ cup packed brown sugar
07 - ¾ cup any milk you prefer
08 - 1 teaspoon vanilla essence
09 - 2 cups sweet potatoes, mashed
10 - 2 eggs, whites only
11 - 2 eggs, yolks only
12 - ¼ cup melted oil or butter (neutral flavor)

# Instructions:

01 - In a big bowl, toss in flour, baking powder, baking soda, pumpkin spice, and cinnamon. Use a whisk to stir it all together. Set aside once mixed.
02 - Crack the eggs and place yolks in one medium bowl, while whites go into another. Put the egg white bowl on standby for later.
03 - Mix the mashed sweet potatoes, oil or melted butter, vanilla extract, and milk with the egg yolks. Keep whisking until the mixture looks smooth and uniform.
04 - Gently stir the wet bowl into the dry ingredients. Mix just enough to blend everything together and smooth out lumps. Pause here for now.
05 - Plug in a hand mixer and whisk the whites until they’re forming soft peaks. Slowly sprinkle in the brown sugar while beating, then continue until stiff peaks appear.
06 - Carefully fold the beaten whites into the batter. Don’t overdo it; stop once the whites and batter have merged into one.
07 - Turn on the waffle maker and let it fully heat. Spray it with neutral-flavored cooking spray to prevent sticking. Ensure every corner gets coated.
08 - Pour batter into the waffle iron using a scoop, cup, or ladle. Shut the lid and cook for 5 minutes or until the steam stops and the waffles turn golden.
09 - Once done, lift the waffles out and place them on a plate. Continue this process with the rest of the batter. Add your favorite toppings and dig in while warm.

01 - How many waffles you get depends on the size of your waffle iron and how much batter you use for each one.
