Plug in a hand mixer and whisk the whites until they’re forming soft peaks. Slowly sprinkle in the brown sugar while beating, then continue until stiff peaks appear.

Carefully fold the beaten whites into the batter. Don’t overdo it; stop once the whites and batter have merged into one.

Turn on the waffle maker and let it fully heat. Spray it with neutral-flavored cooking spray to prevent sticking. Ensure every corner gets coated.

Pour batter into the waffle iron using a scoop, cup, or ladle. Shut the lid and cook for 5 minutes or until the steam stops and the waffles turn golden.
