Raspberry Cheese Bites (Print Version)

# Ingredients:

→ Base

01 - 1 package of Pillsbury pie dough, kept at room temp

→ Raspberry Sauce

02 - ½ cup white sugar
03 - 6 tablespoons water
04 - 3 tablespoons cornstarch
05 - 1¾ cups fresh raspberries

→ Cream Cheese Filling

06 - 8 ounces softened cream cheese
07 - ½ cup regular sugar
08 - 1 egg yolk
09 - 1 teaspoon vanilla
10 - 1 teaspoon fresh lemon juice

# Instructions:

01 - Turn your oven on to 375°F (190°C). Cover baking sheets with parchment paper or spray lightly with cooking oil.
02 - Toss raspberries, cornstarch, water, and sugar into a small pot. Heat gently, stirring now and then, until the mixture thickens. Let it cool off.
03 - Whip cream cheese until it's fluffy. Stir in sugar, egg yolk, fresh lemon, and vanilla. Keep mixing till smooth and creamy.
04 - Roll out dough on a floured surface and slice each into 16 strips. Spread on cream cheese mixture, spoon raspberry sauce on top, then roll up towards the center edge.
05 - Bake the rolls on your trays for 20-22 minutes till they turn a nice golden color. Let them cool a bit before offering them up.

# Notes:

01 - You can swap raspberries for other berries if you want a twist
02 - Keep in the fridge for up to 3 days or freeze for a month
03 - Make the fillings a day early to save time
