Turn your oven on to 375°F (190°C). Cover baking sheets with parchment paper or spray lightly with cooking oil.

Toss raspberries, cornstarch, water, and sugar into a small pot. Heat gently, stirring now and then, until the mixture thickens. Let it cool off.

Whip cream cheese until it's fluffy. Stir in sugar, egg yolk, fresh lemon, and vanilla. Keep mixing till smooth and creamy.

Roll out dough on a floured surface and slice each into 16 strips. Spread on cream cheese mixture, spoon raspberry sauce on top, then roll up towards the center edge.

Bake the rolls on your trays for 20-22 minutes till they turn a nice golden color. Let them cool a bit before offering them up.
