# Ingredients:

01 - 1 red bell pepper, finely chopped
02 - 3 cups of fresh pineapple, diced (roughly 1 medium)
03 - ¼ cup of freshly chopped cilantro
04 - 1 medium jalapeño, deveined, seeded, and minced
05 - ½ cup red onion, chopped fine (about half a small onion)
06 - ¼ teaspoon of finely ground sea salt
07 - 3 tablespoons of lime juice (around 1 and a half limes)

# Instructions:

01 - Grab a medium bowl and toss in the pineapple, onion, pepper, cilantro, and jalapeño. Then pour in the lime juice, sprinkle in the salt, and give it a good mix.
02 - Taste and tweak to your liking—add a squeeze more lime for brightness or sprinkle a bit more salt if needed.
03 - To let the flavors meld, let the salsa sit for 10 minutes or longer. Serve it right away or stash it in the fridge for up to 4 days.

02 - Want a milder kick? Use just half a jalapeño and skip the seeds and veins. Craving more heat? Toss in up to two peppers.
03 - You can swap the pineapple with diced mango, melon, cucumber, strawberries, or tomatoes. Skip the bell pepper for these alternatives if needed.
