Turn the heat to medium under your nonstick pan. Scoop around 1 tablespoon of cheese into small flat mounds, leaving a bit of space between them. Fit about 4-6 at one go depending on how much room you've got.

When the cheese begins to bubble (roughly 1 minute), put a slice of pepperoni on each pile. Let it sit until the edges are browned and crispy.

Flip each pile carefully so the pepperoni side faces down. Let it cook for about 30 seconds longer. Move them to a plate with the pepperoni side facing up and enjoy with the tomato sauce.
