Put the Greek yogurt, lime zest, vanilla extract, protein powder, sweetener, and lime juice into a medium bowl. Stir until it’s smooth and creamy.

On a baking tray lined with parchment paper or a silicone mat, pour the yogurt mixture and spread it out evenly into a thin layer.

Scatter the toasted coconut, crushed graham crackers, and a little lime zest over the top of the yogurt mixture.

Stick the baking tray in the freezer for at least 2 to 3 hours, letting the yogurt set completely and freeze solid.

Take the frozen yogurt out of the freezer, lift the whole sheet using the parchment paper, and break it up into pieces. Eat it right away or store it for another time.
