# Ingredients:

01 - 1 tablespoon lime zest
02 - 1 teaspoon vanilla extract
03 - 2 tbsp powdered swerve (or swap with 1 tbsp honey, adjust to taste)
04 - 3.5 tbsp key lime juice
05 - 2.5 cups plain Greek yogurt (non-fat or low-fat works great; use dairy-free if preferred)
06 - 1 scoop vanilla protein powder (dairy-free or regular)

07 - Optional lime zest for decoration
08 - 1/4 cup unsweetened coconut flakes, toasted
09 - 1/3 cup crushed graham crackers (gluten-free preferred, like Simple Mills Honey Cinnamon Sweet Thins)

# Instructions:

01 - Put the Greek yogurt, lime zest, vanilla extract, protein powder, sweetener, and lime juice into a medium bowl. Stir until it’s smooth and creamy.
02 - On a baking tray lined with parchment paper or a silicone mat, pour the yogurt mixture and spread it out evenly into a thin layer.
03 - Scatter the toasted coconut, crushed graham crackers, and a little lime zest over the top of the yogurt mixture.
04 - Stick the baking tray in the freezer for at least 2 to 3 hours, letting the yogurt set completely and freeze solid.
05 - Take the frozen yogurt out of the freezer, lift the whole sheet using the parchment paper, and break it up into pieces. Eat it right away or store it for another time.
