In a small dish, stir together the salt, coriander, thyme, basil, and black pepper.

Rub olive oil all over the lamb, sprinkle on the spice mixture, and press chopped nuts onto it so they stick well.

Set the lamb in your air fryer basket and let it cook at 180°C (360°F) for 7 minutes on one side.

Turn the lamb to the other side and air-fry it for another 7 minutes, or until it’s close to your preferred doneness—use a meat thermometer to check.

Take the lamb out of the air fryer, wrap it up in foil, and leave it alone for 10 minutes to rest while the temperature rises a few more degrees and the juices even out.

Take off the foil, slice the lamb thinly, and serve it alongside your favorite veggies or sauce.
