Juicy Lamb Air Fryer (Print Version)

# Ingredients:

01 - Rack of lamb, about 2 pounds (907g)
02 - Olive oil, 2 tablespoons
03 - Black pepper, ground, ½ teaspoon
04 - Thyme, dried, 1 teaspoon
05 - Basil, dried, 1 teaspoon
06 - Coriander, ground, ½ teaspoon
07 - Salt, ½ teaspoon
08 - Chopped pistachios or almonds, 2 tablespoons

# Instructions:

01 - In a small dish, stir together the salt, coriander, thyme, basil, and black pepper.
02 - Rub olive oil all over the lamb, sprinkle on the spice mixture, and press chopped nuts onto it so they stick well.
03 - Set the lamb in your air fryer basket and let it cook at 180°C (360°F) for 7 minutes on one side.
04 - Turn the lamb to the other side and air-fry it for another 7 minutes, or until it’s close to your preferred doneness—use a meat thermometer to check.
05 - Take the lamb out of the air fryer, wrap it up in foil, and leave it alone for 10 minutes to rest while the temperature rises a few more degrees and the juices even out.
06 - Take off the foil, slice the lamb thinly, and serve it alongside your favorite veggies or sauce.
