Sweet Potato with Feta (Print Version)

# Ingredients:

01 - 3 tablespoons of olive oil, for roasting.
02 - 3 big sweet potatoes, peeled if you prefer.
03 - A pinch of red pepper flakes for mild heat.
04 - Half a teaspoon of cumin powder.
05 - Half a teaspoon of ground coriander.
06 - Half a teaspoon of smoked paprika.
07 - Half a teaspoon of cinnamon.
08 - 1 full teaspoon of kosher salt.
09 - Half a teaspoon of black pepper.
10 - 1 tablespoon honey, spicy or plain.
11 - One-third cup crumbled feta cheese.
12 - Chopped fresh herbs like parsley or chives.
13 - Extra honey to drizzle before serving.

# Instructions:

01 - Turn on the oven to 425°F. Rinse and dry the sweet potatoes, then cut them into slices about ⅓-inch thick.
02 - Spread oil on a baking sheet. Toss the potatoes with the oil and season them with your spices. Finish with a drizzle of honey.
03 - Lay the sweet potato slices flat on the baking sheets without overlapping. Use more than one sheet if necessary.
04 - Bake for about 20 minutes. Flip the slices, then roast for another 20-25 minutes until the edges crisp up and they turn golden.
05 - Move the cooked potatoes to a serving plate. Sprinkle with more salt, drizzle with honey, and top with feta and herbs. Serve while warm.
