Best Apple Pie Ever (Print Version)

# Ingredients:

01 - Double crust pastry for both the base and top.
02 - Peel and slice 10 cups of apples (around 8 big ones) into ¼-inch pieces.
03 - Half a cup of white sugar.
04 - A quarter cup of regular flour.
05 - Juice from one tablespoon of fresh lemons.
06 - 1½ teaspoons ground cinnamon spice.
07 - A small pinch (¼ teaspoon) of allspice.
08 - About ¼ teaspoon of ground nutmeg.
09 - One large egg, whisked together with a tablespoon of milk as an egg wash.
10 - Optional: coarse sugar to sprinkle on top.

# Instructions:

01 - Follow the crust recipe all the way through to step 5.
02 - Toss apple slices, white sugar, flour, lemon juice, and spices together until everything's coated well.
03 - You can skip this step, but it boosts flavor: Gently cook the apple mix in a big skillet over medium-low heat for about 5 minutes to soften them a little.
04 - Roll out the bottom crust and add the apple filling. Cut the top crust into strips and make a lattice design. Seal the edges and pinch them together.
05 - Start baking at 400°F for 25 minutes, then turn the heat down to 375°F and bake another 35-40 minutes. Cover the edges while baking to prevent over-browning.
06 - Let it sit for at least 3 hours to let the filling settle before cutting and serving.

# Notes:

01 - A mix of sweet and tart apple varieties works best.
02 - Cooking the filling beforehand deepens the flavors.
03 - The center should reach 200°F for the best results.
