Use a damp sponge or towel to clean mushrooms. Cut them into slices about a half-inch thick.

Put olive oil into a big skillet or Dutch oven and set it over medium heat. Once warmed, toss in butter, mushrooms, salt, and pepper.

Cook the mushrooms for 8 to 10 minutes, stirring now and then, till they're soft and most of the liquid is gone. If there's extra liquid, pour it off. Add soy sauce, vinegar, and garlic. Stir for 30 seconds more, keeping a close eye on it.

Take off the heat. Mix in herbs, taste to see if seasoning needs tweaking, and serve warm, sprinkling on extra fresh herbs.
