Take each chicken breast and carefully slice it in half horizontally to get four thin pieces. Sprinkle both sides lightly with salt and pepper.

Spread the flour in a flat bowl or plate. Dip each piece of chicken in, making sure it's covered well but shaking off any extra.

Warm most of the butter in a big frying pan over high heat, saving a teaspoon for later. Lay the chicken in and cook one side for a couple of minutes till golden. Turn them over for a quick minute to finish.

Turn the heat to medium-high. Nudge the chicken to the edges of the pan and toss in the garlic and that saved butter. Stir it for a few moments to soften the garlic.

Pour in the honey, vinegar, and soy sauce. Mix it around and let it bubble up. Cook briefly till the mixture thickens just slightly — it won’t take long.

Flip the chicken around in the sauce so it's covered all over. If the sauce seems too thick, splash in some water in small amounts to loosen it up.

Take the pan off the heat. Serve the chicken and drizzle the leftover sauce on top for extra flavor before eating.
