Start with a 200°C oven. Toss garlic cloves with olive oil and salt, then put them in a small lidded dish or cover with foil. Bake for 20 minutes or until they're golden and soft. Mash 'em up, then set aside.

In a mixing bowl, whisk together the mashed roasted garlic, butter, egg, milk, salt, paprika, and chopped parsley until totally blended.

Lower oven temp to 175°C. Take your bread, slice the whole piece horizontally into two, and put it on a tray. Toast for 8-10 minutes till just golden.

Pour the garlic custard into a big skillet. Dip the toasted bread into it carefully, making sure all the sides soak up that goodness.

Pop the soaked bread back on the baking tray, and bake at 175°C for 15-18 minutes until it's golden. Cover with mozzarella and broil (grill) for around 5 minutes to melt and brown the cheese.

Sprinkle chopped parsley and some chili flakes over the cheesy bread slices. Cut them up and dig in!
