Squeeze all the liquid out of your frozen spinach if you're using it. Then, toss the spinach, feta, ricotta, garlic, dill, nutmeg, and seasonings into a bowl. Stir it all together until it's well mixed.

Set your oven to heat at 190°C or 375°F. Gently lay one piece of phyllo dough flat, and brush a thin layer of melted butter or oil over it. Add another layer of phyllo and brush again. Keep going until you’ve got three sheets stacked up.

Slice the stacked phyllo into strips about 3 inches wide. Spoon a little bit of your filling onto the lower end of each strip. Fold it at an angle, starting with one corner, and keep flipping it to form a triangle until it’s all wrapped up. Do the same for the remaining strips.

Pop your triangles onto a baking tray lined with parchment. Brush the tops with butter or oil, and sprinkle with sesame seeds if you'd like. Bake them for 15-20 minutes until they’re crispy and golden brown.

Let the little triangles cool slightly before digging in. Pair them with a refreshing Greek salad or some creamy tzatziki for a complete Mediterranean vibe.
