Chop the mozzarella sticks in half for smaller portions, if you'd like. Lay them on a sheet pan.

Set up three bowls side by side: add flour to the first one, whisked eggs in the second, and a mix of panko, garlic powder, seasonings, and salt in the last.

Pick up one stick at a time. Cover it with flour, dip it into the egg, and roll it all around in breadcrumbs until fully coated.

Spread the breaded cheese sticks on a tray and pop them in the freezer for a minimum of 30 minutes. This keeps them firm while cooking.
