Crispy Bunuelos (Print Version)

# Ingredients:

01 - 1/2 tablespoon ground cinnamon.
02 - 6 tablespoons white sugar.
03 - 2 cups fry-safe vegetable oil.
04 - 2/3 cup water, slightly warm.
05 - 3 tablespoons melted coconut oil.
06 - 1/2 teaspoon salt.
07 - 1/2 teaspoon baking powder.
08 - 2 cups plain flour.

# Instructions:

01 - Mix baking powder, salt, and flour in a bowl. Stir in coconut oil and water until combined.
02 - Divide dough into 8 pieces. Form into small balls and press them flat. Let rest for half an hour.
03 - Use a rolling pin or press to roll each portion super thin.
04 - Heat oil to 350°F. Fry each piece for around 30-45 seconds on both sides, flipping when browned.
05 - Place fried pieces on paper towels to remove extra oil. Cover with a mix of cinnamon and sugar.
06 - Work the dough by hand for 10-15 minutes until it's stretchy and smooth. Adjust with water or flour, if necessary.

# Notes:

01 - Pop them in a 250°F oven to keep warm if needed.
02 - Fry one at a time so they cook evenly.
03 - Dough should feel sticky but still manageable.
