Mix baking powder, salt, and flour in a bowl. Stir in coconut oil and water until combined.

Divide dough into 8 pieces. Form into small balls and press them flat. Let rest for half an hour.

Use a rolling pin or press to roll each portion super thin.

Heat oil to 350°F. Fry each piece for around 30-45 seconds on both sides, flipping when browned.

Place fried pieces on paper towels to remove extra oil. Cover with a mix of cinnamon and sugar.

Work the dough by hand for 10-15 minutes until it's stretchy and smooth. Adjust with water or flour, if necessary.
