Set your oven to 425°F and pop a large tray inside to heat it up while the oven preheats.

Trim and peel the beets before cutting them into thick slices. Slice those into strips about ½ inch wide.

Grab a big bowl, toss in your beet strips, olive oil, salt, and pepper. Stir them around to coat them evenly.

Carefully pull out the hot baking tray and spread your beet strips out in a single layer. Roast for 15 minutes, give them a flip, then roast for another 10 until they’re nice and crispy. Sprinkle with more salt when done.

In a small dish, stir together the sambal oelek and the light mayo until smooth. Pair it with your beet fries for dipping.
