Crispy Beet Fries Aioli (Print Version)

# Ingredients:

01 - 1 teaspoon ground pepper
02 - 1 tablespoon extra virgin olive oil
03 - 4 medium golden or red beets
04 - 1 teaspoon salt

→ Aioli Dipping Sauce

05 - 1 tablespoon sambal oelek
06 - 1/2 cup light mayonnaise

# Instructions:

01 - Set your oven to 425°F and pop a large tray inside to heat it up while the oven preheats.
02 - Trim and peel the beets before cutting them into thick slices. Slice those into strips about ½ inch wide.
03 - Grab a big bowl, toss in your beet strips, olive oil, salt, and pepper. Stir them around to coat them evenly.
04 - Carefully pull out the hot baking tray and spread your beet strips out in a single layer. Roast for 15 minutes, give them a flip, then roast for another 10 until they’re nice and crispy. Sprinkle with more salt when done.
05 - In a small dish, stir together the sambal oelek and the light mayo until smooth. Pair it with your beet fries for dipping.

# Notes:

01 - Make sure the beet pieces are all about the same size so they cook evenly.
02 - Don’t overcrowd your tray; grab another tray if things look packed.
03 - Heating up the tray first helps make the fries crispier.
04 - Flip the fries halfway through roasting to brown them evenly.
05 - These won’t be as crunchy as regular fries. Deep fry them for extra crunch if that's what you want.
06 - You can freeze them and reheat later in the oven at 350°F for around 15 minutes.
