07 - 1 cup sharp cheddar cheese, grated
08 - 2 tablespoons unsalted butter

# Instructions:

01 - Warm some olive oil in a Dutch oven over medium heat. Toss in the sausage slices and cook until they're golden and crispy. Scoop them out to a plate for later.
02 - Use the same pot with the sausage drippings. Toss in the chopped onion, bell pepper, and celery. Stir them up and let them cook until softened—about 2-3 minutes. Add the garlic at the end, letting it go for another minute.
03 - Mix in the butter with the softened veggies. Sprinkle in the flour and stir until you have a thick mix. Let it cook for a couple of minutes so it loses that raw taste; this thickens the soup beautifully.
04 - Slowly stir in the broth and half-and-half, making sure it stays smooth. Then add the potato chunks along with your Cajun seasoning. Keep it bubbling gently on medium-low heat for 20-25 minutes, until the potatoes soften.
05 - Put the cooked sausage back in and sprinkle in the cheddar. Stir it up so the cheese melts smoothly into the soup. Test for seasoning, adjust if needed, then dish it out into bowls and sprinkle with parsley.
