Creamy Avocado Pasta (Print Version)

# Ingredients:

01 - 4-5 slices of crispy bacon, broken into bits
02 - 1 teaspoon kosher salt
03 - 1 lb of linguini, uncooked
04 - 2 large kale leaves
05 - 1/3 cup grated parmesan
06 - Pinch of cayenne pepper
07 - 1/4 cup of olive oil (extra-virgin works best)
08 - 1 cup of the water you used to cook the pasta
09 - 3-4 garlic cloves
10 - 2 avocados (skins off, seeds out)
11 - 1/2 teaspoon smoked paprika
12 - 2 egg yolks
13 - 1 1/2 tablespoons fresh lemon juice

# Instructions:

01 - Fill a big pot with water and heat until boiling. Add salt, toss in the linguini, and cook until it’s just tender but still has a bite (al dente). Before draining, scoop out 1 cup of the cooking water.
02 - Toss the avocado, garlic, egg yolks, kale, lemon juice, paprika, cayenne, olive oil, and salt into a blender or processor. Blend everything until it’s a smooth, creamy mix.
03 - Keep your blender or processor on low speed and slowly pour in the hot pasta water as it blends. Keep going until it reaches a creamy texture.
04 - Take your cooked linguini noodles and pour the avocado mixture over them. Stir it all together until the noodles are nicely coated.
05 - Sprinkle the parmesan cheese and bacon bits on top of the pasta. Mix lightly and serve while it’s nice and warm.
