Fill a big pot with water and heat until boiling. Add salt, toss in the linguini, and cook until it’s just tender but still has a bite (al dente). Before draining, scoop out 1 cup of the cooking water.

Toss the avocado, garlic, egg yolks, kale, lemon juice, paprika, cayenne, olive oil, and salt into a blender or processor. Blend everything until it’s a smooth, creamy mix.

Keep your blender or processor on low speed and slowly pour in the hot pasta water as it blends. Keep going until it reaches a creamy texture.

Take your cooked linguini noodles and pour the avocado mixture over them. Stir it all together until the noodles are nicely coated.

Sprinkle the parmesan cheese and bacon bits on top of the pasta. Mix lightly and serve while it’s nice and warm.
