Oatmeal Raisin Bars (Print Version)

# Ingredients:

→ Cookie Base

01 - 3/4 cup unsalted butter, softened to room temperature
02 - 1 cup raisins
03 - 2 large eggs, brought to room temperature
04 - 2 cups quick-cooking oats
05 - 3/4 cup packed light brown sugar
06 - 1 1/2 cups all-purpose flour
07 - 1 teaspoon baking soda
08 - 1/2 teaspoon fine salt
09 - 2 teaspoons vanilla extract
10 - 3/4 teaspoon ground cinnamon

→ Cinnamon-Maple Frosting

11 - 1/2 teaspoon ground cinnamon
12 - 1-2 tablespoons heavy cream, at room temperature
13 - 1/4 teaspoon maple extract (optional if you want more maple flavor)
14 - 1/2 cup unsalted butter, softened
15 - 1 tablespoon maple syrup
16 - 1 1/2 cups powdered sugar

# Instructions:

01 - Kick things off by cranking your oven to 350°F (175°C). Take a 9×9-inch pan, give it a good spray with cooking spray, then line it with parchment paper so removing the bars is a breeze.
02 - Combine your flour, salt, baking soda, and cinnamon in a medium mixing bowl. Whisk until everything’s evenly blended.
03 - Beat together the softened butter and brown sugar until it turns pale and fluffy. Remember to scrape down the sides of the bowl now and then!
04 - Stir in the eggs, one at a time, mixing well after each. Add the vanilla extract, then carefully mix in the dry ingredients until just combined. Don’t forget to fold in the oats and raisins at the end.
05 - Spread the dough evenly in the pan you prepped and bake it for 18–20 minutes. You’ll know it’s done when the edges are a golden brown. Let it cool in the pan for a bit—about 5–10 minutes—before transferring to a rack.
06 - With the bars cooling off, start on the frosting. Beat the butter until smooth, and then slowly mix in the powdered sugar. Stir in the maple syrup, cinnamon, cream, and maple extract if you’re using it. Mix until it’s creamy and easy to spread.
07 - Once those bars are nice and cool, evenly spread your maple-cinnamon frosting on top. Slice into squares and dig in!

# Notes:

01 - Soft oatmeal raisin bars topped with creamy maple-cinnamon frosting combine classic flavors with a fun twist.
02 - For plumper raisins, soak them in warm water for a few minutes before adding to the mix.
