Combine yeast, sugar, and warm water in a small bowl. Give it about 5-10 minutes to foam up. In a big mixing bowl, stir in the flour and salt. Pour in the olive oil and yeast mixture, mixing until it forms dough. Move the dough onto a floured surface and knead by hand for 5-7 minutes until it’s smooth and stretchy. If you're using a stand mixer, a dough hook makes this easier. Cover with a damp towel and let rest for around 15 minutes.

Set your oven to 375°F (190°C) and get a baking sheet ready with olive oil or parchment paper. Roll the dough out to about 9×13 inches on a floured surface. With a knife or pizza cutter, cut it into 12 even strips.

Lay the dough strips on the baking sheet. Brush butter over the top, sprinkle garlic powder (if you like), and layer on mozzarella and parmesan cheese. For a hint of extra flavor, sprinkle dried oregano or Italian seasoning on top.

Place in the oven for 20-25 minutes or until the breadsticks are nicely golden and the cheese has melted beautifully.

Give the breadsticks a couple of minutes to cool after baking. Slice them up and enjoy with marinara or any dipping sauce you love.
