Cheesy Bacon Casserole (Print Version)

# Ingredients:

→ Main Ingredients

01 - 9 eggs, beaten gently
02 - 4 cups of thawed, shredded hash browns (frozen before)
03 - 1 pound of diced-up bacon

→ Cheese Mixture

04 - 1¼ cups of shredded Swiss cheese
05 - 1½ cups of cottage cheese
06 - 2 cups of cheddar cheese, shredded

→ Seasonings

07 - Salt and pepper to your liking

# Instructions:

01 - Set the oven to 350°F and get a 9x13-inch baking dish greased up.
02 - In a big skillet, fry up the bacon pieces till they’re crispy and transfer them to a spacious bowl.
03 - Mix in hash browns, eggs, cheeses (cheddar, cottage, and Swiss), and some salt and pepper. Pour it all into the prepped baking dish.
04 - Pop it in the oven for 40-45 minutes. Cover the top with foil if it starts browning quicker than the rest of the dish cooks.
05 - Let it sit for 10 minutes before cutting and serving. Enjoy every bite!

# Notes:

01 - This cheesy hash brown bake is a crowd-pleaser and comes together in just 15 minutes!
02 - Don’t have frozen hash browns? Use fresh ones! Shred 4-5 medium Russets, soak them in cold water for about 10 minutes to get rid of some starch, and pat them dry before using.
03 - Want to prep ahead? Put it all together, cover it, and chill overnight. Add 10 extra minutes to cook time in the morning. You can also freeze it for up to 3 months. Thaw in the fridge before baking.
04 - Leftovers store great! Keep individual portions in the fridge for 3-4 days or freeze them for up to 2-3 months.
