Grab a big skillet and toast your pecans on medium heat until they're golden and smell great. Cool them off, but save a bit for sprinkling later if you'd like.

In a big mixing bowl, toss together the cheddar, mayo, cayenne, onion, and pecans. Stir until it's all blended nicely.

Using a spatula, shape the cheese blend into a ring on your serving dish. Pop it in the fridge covered with plastic wrap for at least a few hours to firm up.
