Salted Caramel Cookies (Print Version)

# Ingredients:

→ Wet Ingredients

01 - 2 teaspoons pure vanilla extract
02 - 2 large fresh eggs
03 - 1/2 cup white sugar
04 - 1 cup soft, unsalted butter
05 - 1 cup packed light brown sugar

→ Dry Ingredients

06 - 1 teaspoon baking soda
07 - 2 3/4 cups regular flour
08 - 1/2 teaspoon fine salt

→ Filling & Topping

09 - Chopped soft caramels or 1 cup caramel pieces
10 - Sprinkle of flaky salt

# Instructions:

01 - Turn your oven on to 350°F (175°C) and prep your baking tray with either parchment paper or a silicone liner.
02 - Using a hand or stand mixer, whip the butter and both sugars together for a few minutes until the mix turns fluffy and light.
03 - Add the eggs one at a time, making sure everything is smooth before moving on. Stir in the vanilla last.
04 - Combine the flour, baking soda, and salt in another bowl. Slowly fold this into the wet mix until the flour disappears.
05 - Stir the caramel pieces into the dough gently, spreading them evenly throughout.
06 - Scoop 1.5 tablespoons of dough for each cookie, leaving about 2 inches between scoops on the baking sheet. Pop them in the oven for 10-12 minutes until the edges are golden but the centers stay soft.
07 - Right after pulling them out, sprinkle with a little flaky salt. Let them sit on the tray for 5 minutes before transferring them to a cooling rack.

# Notes:
