Turn your oven on to 350°F (175°C) and prep your baking tray with either parchment paper or a silicone liner.

Using a hand or stand mixer, whip the butter and both sugars together for a few minutes until the mix turns fluffy and light.

Add the eggs one at a time, making sure everything is smooth before moving on. Stir in the vanilla last.

Combine the flour, baking soda, and salt in another bowl. Slowly fold this into the wet mix until the flour disappears.

Stir the caramel pieces into the dough gently, spreading them evenly throughout.

Scoop 1.5 tablespoons of dough for each cookie, leaving about 2 inches between scoops on the baking sheet. Pop them in the oven for 10-12 minutes until the edges are golden but the centers stay soft.

Right after pulling them out, sprinkle with a little flaky salt. Let them sit on the tray for 5 minutes before transferring them to a cooling rack.
