Set your oven to 350°F (175°C) and let it heat up.

Grab a small bowl that's safe for the microwave and toss in the mustard, honey, and butter. Heat for 20 seconds or so until the butter's melted, then stir until smooth.

Take a serrated knife to your croissants and slice them in half horizontally. Spread the mustard-honey mix on the cut-side surfaces of both top and bottom halves.

Start with the bottom croissant half. Lay down a slice of cheese, then a quarter of the ham, add two bacon slices, and finish with another slice of cheese on top. Put the other croissant half on to finish.

Place the prepared sandwiches on a baking tray and bake for 10-15 minutes, or until the cheese has melted and the croissants have a nice golden crust.

While the sandwiches are baking, whisk together the eggs, milk, and a pinch of salt and pepper in a bowl.

Melt butter in a nonstick pan over medium heat. Pour in your whisked eggs and gently stir to make soft scrambled eggs. Cook for 2-3 minutes until they're just set but still a bit creamy.

Take the sandwiches out of the oven, open them up, and divide the scrambled eggs between them. Sprinkle on some chives if you like, then serve.
