Peel the broccoli stalks, chop them up neatly.

Melt 3 tablespoons of butter, toss in garlic and onions to cook.

Add water, salt, and stalks to your pot. Simmer gently for 20-25 minutes.

Cut the florets, toss them in. Cook about 4-7 minutes till vibrant green.

Drop in the last bit of butter. Blend batches until super smooth. Add lemon juice, tweak seasoning.

Top with optional cream or some fresh chives, then serve warm.
