Creamy Broccoli Soup (Print Version)

# Ingredients:

01 - 6 cups of water.
02 - 1-2 teaspoons freshly squeezed lemon juice.
03 - 6 garlic cloves, crushed.
04 - Black pepper as much as you like.
05 - 4 tablespoons of unsalted butter, split.
06 - 2 pounds of broccoli, including stalks.
07 - 2 chopped medium yellow onions.
08 - 1ΒΌ teaspoons of fine salt.
09 - Optional toppings: Chives, Heavy cream.

# Instructions:

01 - Peel the broccoli stalks, chop them up neatly.
02 - Melt 3 tablespoons of butter, toss in garlic and onions to cook.
03 - Add water, salt, and stalks to your pot. Simmer gently for 20-25 minutes.
04 - Cut the florets, toss them in. Cook about 4-7 minutes till vibrant green.
05 - Drop in the last bit of butter. Blend batches until super smooth. Add lemon juice, tweak seasoning.
06 - Top with optional cream or some fresh chives, then serve warm.
