01 - 2 pounds Idaho or Yukon Gold potatoes, peeled and cut into 1/2-inch chunks
02 - 1 medium onion, chopped finely
03 - 4 minced garlic cloves
04 - 1 pound ground beef, 90% lean

05 - 1 teaspoon black pepper
06 - 1 tablespoon spicy hot sauce (e.g., Cholula)
07 - 2 tablespoons cooking oil
08 - 1 teaspoon kosher salt

# Instructions:

01 - In a big skillet, cook the beef over medium-high heat till it's fully browned. Season with salt and pepper if you like. Move it to a plate when done.
02 - If you want, pour out excess grease and use a paper towel to wipe the pan clean.
03 - Put the pan back on medium-high heat, toss in the oil and potato chunks, and cook them for 12-15 minutes. Stir every so often to stop sticking or burning. They should soften up but not fall apart.
04 - Pour in the onions and cook them for about 5 minutes until they're soft. Stir in minced garlic, hot sauce, salt, and pepper. Let everything cook for 2 minutes until you can smell the garlic.
05 - Add the beef back into the skillet, gently mix it with the potatoes and onions. Put the lid on, reduce to low heat, and let it all warm through for 5 minutes.
06 - If you'd like, sprinkle minced parsley or drizzle extra hot sauce on top before digging in.
