Southwest Sweet Potato Skillet (Print Version)

# Ingredients:

01 - 1 pound of ground beef, either 85/15 or 90/10.
02 - 2 medium sweet potatoes.
03 - 4 fresh tomatoes, like Campari or vine-ripened.
04 - A jar of salsa verde.
05 - 1 large sweet onion.
06 - 4 cloves of fresh garlic.
07 - 1 tablespoon of tomato paste.
08 - 2 teaspoons of cumin powder.
09 - 1 teaspoon of ground coriander.
10 - Salt and black pepper to your liking.
11 - 1 cup of shredded cheese.
12 - 1/4 cup of chopped cilantro (optional).
13 - Sliced jalapeño (if you'd like).
14 - Sour cream (optional).

# Instructions:

01 - On medium heat, sauté your sweet potatoes in oil until golden brown.
02 - Remove the potatoes and soften the onions in the same pan.
03 - Cook the beef with garlic, spices, tomato paste, and diced tomatoes.
04 - Mix in salsa verde, then add the sautéed potatoes. Cook until they're tender.
05 - Sprinkle cheese on top and add any extras you'd like before serving.

# Notes:

01 - Frozen sweet potato chunks are fine too.
02 - Try different cheeses for variety.
03 - Feel free to pick your favorite toppings.
