Beef Sweet Potato Skillet (Print Version)

# Ingredients:

01 - 1 pound of ground beef, 85/15 or 90/10.
02 - 2 medium-sized sweet potatoes.
03 - 4 tomatoes, either vine or Campari.
04 - A few spoonfuls of salsa verde.
05 - 1 large sweet onion.
06 - 4 fresh garlic cloves.
07 - 1 tablespoon of tomato paste.
08 - 2 teaspoons of ground cumin.
09 - 1 teaspoon of ground coriander.
10 - Salt and black pepper, as much as you like.
11 - 1 cup of shredded cheese.
12 - A handful (optional) of chopped cilantro (1/4 cup).
13 - Optional: sliced jalapeño peppers.
14 - Optional: a dollop of sour cream.

# Instructions:

01 - Cook sweet potato pieces in oil on medium heat until golden brown.
02 - Move cooked potatoes off the pan, and sauté onions until they soften.
03 - Brown the beef, then mix in the tomatoes, garlic, paste, and seasonings.
04 - Stir in salsa verde and toss the potatoes back in. Keep cooking until soft and tender.
05 - Sprinkle cheese on top and add your favorite garnishes, if using.

# Notes:

01 - You can swap fresh sweet potatoes with frozen ones.
02 - Any cheese you like will work here.
03 - Feel free to pick your own toppings.
