Slow Cooker Beef Meal (Print Version)

# Ingredients:

→ Meat

01 - 5 strips of bacon, chopped up finely
02 - 3 pounds of beef chuck, cut into small 1-inch chunks

→ Vegetables

03 - 1 pound of baby potatoes, assorted colors
04 - 5 medium-sized carrots, cut into slices
05 - 3 garlic cloves, minced
06 - 8 ounces of fresh mushrooms, cut into slices

→ Sauce & Seasonings

07 - 1/4 cup of soy sauce
08 - 1/2 cup of tomato puree
09 - 1/4 cup of all-purpose flour
10 - 2 cups of chicken stock
11 - 1 cup of red wine used for cooking
12 - 2 tablespoons of fresh, chopped thyme

→ Garnish

13 - Chopped fresh parsley

# Instructions:

01 - Fry the bacon in a large pan until crispy. Move the bacon to the slow cooker. Season the beef cubes, give them a quick sear for a couple of minutes on each side in the same pan, then place them in the slow cooker as well.
02 - Deglaze the pan by pouring in red wine and scrape off any bits stuck to the bottom. Let it reduce slightly, then mix in chicken broth, soy sauce, and tomato puree. Slowly stir in flour until combined and transfer the sauce to the slow cooker.
03 - Put the potatoes, carrots, minced garlic, mushrooms, and thyme into the slow cooker. Give everything a thorough stir to mix.
04 - Let everything cook for 8 to 10 hours on low, or 6 hours on high, until the beef is melt-in-your-mouth tender.
05 - Top with parsley for a fresh finish. Serve with mashed potatoes if you'd like a classic side.
