Irish Fruit Bread (Print Version)

# Ingredients:

→ Dried Fruits

01 - 25g glace cherries, washed, dried, and chopped into small pieces
02 - 225g sultanas or dried currants
03 - 250g raisins

→ Liquids

04 - 50ml Irish whiskey or swap with ginger wine
05 - 300ml cold, brewed strong tea

→ Baking Ingredients

06 - 220g self-raising flour
07 - 1 teaspoon mixed spice (ground)
08 - 200g caster or light brown sugar
09 - 1 medium egg, whisked
10 - 1 tablespoon marmalade (optional)

# Instructions:

01 - In a bowl, mix raisins, sultanas, cherries, tea, and Irish whiskey. Cover it well and let it sit overnight.
02 - Set your oven to 180°C (160°C Fan) / 350°F / Gas Mark 4 and preheat. Grease and line a 2lb loaf tin (around 5x8 inches).
03 - Add the beaten egg, sugar, flour, and mixed spice into the soaked fruits. Mix until everything comes together and looks smooth.
04 - Pour the mix into your prepared pan. Bake for 80 to 90 minutes. It’s done when it feels springy to the touch and a skewer in the center comes out clean. If the top starts browning too much, cover it lightly with parchment.
05 - Once baked, leave it in the pan to cool completely on a wire rack. While it’s warm, brush the top with marmalade if you’d like. Let it fully cool before slicing.
