In a bowl, mix raisins, sultanas, cherries, tea, and Irish whiskey. Cover it well and let it sit overnight.

Set your oven to 180°C (160°C Fan) / 350°F / Gas Mark 4 and preheat. Grease and line a 2lb loaf tin (around 5x8 inches).

Add the beaten egg, sugar, flour, and mixed spice into the soaked fruits. Mix until everything comes together and looks smooth.

Pour the mix into your prepared pan. Bake for 80 to 90 minutes. It’s done when it feels springy to the touch and a skewer in the center comes out clean. If the top starts browning too much, cover it lightly with parchment.

Once baked, leave it in the pan to cool completely on a wire rack. While it’s warm, brush the top with marmalade if you’d like. Let it fully cool before slicing.
